You set your font for gvim on Mac OS X by including a line like this in your $HOME/.vimrc or $HOME/.gvimrc:
set guifont=Monaco:h14
or
set guifont=Andale\ Mono:h14
If your font doesn't look smooth, you can try adding this line to $HOME/.gvimrc:
set antialias
